lemon ricotta cookies?
Ricotta in cookies? I’m not so sure but the pictures looks yummy and I’m keen on using up all these lemons I still have! Anybody else have a better lemon cookie recipe?

Also! I have a really yummy lemon cookie recipe which is in a cookbook at my house…let me see if I can find a similar one online.

Huh, I cannot find one. It’s a recipe where you roll the cookies in powdered sugar before you bake them, and then they flatten out a bit during baking and they’re all yellow and crackly with powdered sugar, and nice and soft and lemony. I’ll have to email it to you when I get home!

I would try the ricotta recipe, myself. If you don’t like cheesecake, maybe it’s not such a good idea, but it sounds yummy to me.

This is a GREAT recipe but it will only help you use up the zest from the lemons…although you could use some of the juice to make a lemon frosting to put in between them to make sandwich cookies!
